Saturday Croissants
Every Saturday morning, Chef Jean-Marc removes over 700 exquisite hand-rolled croissants from the oven. Made with 100% butter, these rich and flaky pastries are available starting at 9:00. Choose from butter croissants, pain au chocolate, almond croissants, and raisin rolls, but make sure you arrive early or call to reserve, as these delicious treats sell fast! Take a bag to go, or one or two.

Vision from Bill our Master Bread Maker, For me, bread-baking is a passion I have had for over a quarter century, and which has blossomed here at L’Auberge. It represents the blending of science with art. It involves taking seemingly inert ingredients, combining them, and creating something beautiful. It involves satisfying both body with its goodness and soul with its beauty. Each week I invoke the science when I build the dough and let it ferment, then add a little art when the loaves are shaped, scored, and baked. To be able to share my passion for bread with you is a humbling experience. Even more humbling is to have been invited to join the team at L’Auberge and make my contribution to it, as well as to your palate. It is a distinct honor to come to L’Auberge each week: something to which I look forward without fail; it is a personal compliment from you to us when you purchase and enjoy what comes from L’Auberge’s bread oven. The hogs are fed a 100% vegetarian diet and we ask the farmers to select heavier more mature hogs that are at least 10 to 12 months old. The animals are crate free and have access to pasture where permissible.

It is available at 24 months old and for December we offer a 2 - 4 year old version. It is delicately aged on cedar wood planks adding robust flavors to the cheese. An artisan cheese, Le 1608 presents a slightly damp, pinkish rind with a smooth, unctuous, melt-in-your-mouth deep yellow pate. Delicate yet complex buttery flavour with a hint of green apples, and a hazelnut end note. Launched in 2008, Le 1608 pays tribute to the 400th anniversary of Québec City. It is prepared with 100% Canadienne cow’s milk, a small breed of black cow introduced into Québec during the 17th century, in the early colonial days of New France. Reimplanted in the Charlevoix region in 2007, the Canadienne herds on la Ferme Hengil and Ferme Michel Pilote produce the milk that serves to make Le 1608.

L'Origine de Charlevoix has a slightly bloomy orange-coloured rind and an unctuous and runny cream-coloured paste. This cheese features sharp fruity, nutty and animal aromas. It has a rather pungent taste with rich hazelnut notes and a hint of salt. The name of this cheese evokes the fall of a meteorite some 350 million years ago and the resulting mountainous terrain found in the Charlevoix region, today home to the Canadienne breed of cow. L'Origine is made with the milk of these cows.
