We are privileging the most atypic vineyard who have the most to offer. Chef Pick Red French from my hometown ...
Grape variety: 100% Syrah Color: red Soil: Granites. The plots are cultivated on the hillsides of the commune of Chavanay. Vinification / Aging / Blending: 10 to 35% of whole grapes macerate in open concrete vats for 10 to 15 days. Punching down and pumping over alternate throughout the alcoholic fermentation (native yeasts). Toning by gravity in large containers (foudres and demi-muids) but also in vats for an aging period of 8 to 12 months. Mass assembly before bottling, carried out by gravity, without fining or filtration. Tasting: The aromas of small fresh red fruits (raspberry, redcurrant, etc.) are enhanced with slightly peppery and lardy aromas. With a charming character, the mouth opens with fruity flavors to which are added notes of cured meats. Lionel represents the third generation of his family to grow grapes and make wine in Chavanay, south of Lyon. After the Second World War, his grandfather planted vines and orchards, to make wine and sell fresh fruit. When Lionel’s father Philippe took over, he replaced the fruit trees with more vines and dedicated the entire family business to wine production, crafting top-notch northern Rhône reds and whites.

Grape variety: Chardonnay 'Les Collonges" 100% Soil: Granites. The plots are located at the top of the hillsides in the commune of Chavanay. Vinification / Aging / Blending: harvested in small boxes, the grapes are pressed then put in the cold and settled 36 to 48 hours later. Alcoholic fermentation takes place in stainless steel vats with temperature control. Aging for 10 months on fine lees. Light filtration before bottling by gravity. Tasting: brilliant pale yellow color with green reflections. Complex nose of yellow stone fruits (apricots, peaches, etc.) with floral notes (violet, acacia flowers, etc.).
